Coffee starts losing aroma minutes after grinding, and uneven particles extract unevenly — some bitter, some sour, in the same cup. Grinding fresh, to a consistent size, fixes both.
Burr grinders crush beans between two surfaces to a uniform size you can dial in. Blade grinders chop randomly — cheap, but they produce dust and boulders together, which no machine can brew well. If you buy one thing, buy a burr grinder.
Hand grinders are inexpensive and grind beautifully, but take effort each morning. Electric burr grinders cost more and save time. Either beats pre-ground.
